Chef's Inspiration

This fruit-forward salad with a sweet crunchy surprise is one of my long-time favorite salads. The sweetness of the praline pecans really highlights the salty-sweet play going on between the cheese and the fruit. Eat at your own bite and you'll be hooked!

MAD Story

As a member of the Global Culinary Innovators Association, Dan travels frequently seeking ingredient inspiration. On one such trip, Dan visited the jungles of Costa Rica tasting Central American wild avocado varietals. He became separated from his tour group and got lost. After three days, he ran out of food. After five days, his phone ran out of batteries from playing Angry Birds to pass the time. Losing hope of never being found…a monkey appeared. Crunching on one nut after another, the monkey said his name was Olomomo and he was the god of adventure. The monkey offered Dan as many delicious nuts as he could eat and they revitalized him immediately. “I HAVE to share these with the world, Olomomo! Once I get home, would you ship your nuts to me so I can sprinkle them into a new salad you just inspired?” Olomomo agreed, but only if Dan named the salad ‘Olomomo.'
