Chef's Inspiration

The Moroccan Caesar salad is Chef Lentine Alexis' elevation of the familiar flavors in a traditional Caesar salad. The fresh mint a staple in many Mediterranean and North African cultures is surprisingly prominent and refreshing. Plus, it's often the first thing available on a farm, so perfect for spring! Mint plays nicely with the quick pickled beets* and onions, both of which are naturally sweet but become tart after pickling. The feta provides a creamy component while the toasted almonds bring the crunch. The Tahini Caesar dressing unites and grounds these unique ingredients for a salad that is fresh, balanced and satisfying.

 

*Fun Fact: Pickling beets are more digestible that other forms because the liquid breaks down the cellulose without losing any nutrients, meaning your body will absorb them faster.
