Chef's Inspiration

This is a great salad for people who like strong textural changes. There's a balance of very bright ingredients like carrots, green onions, corn but it's the mango and wonton strips that bring some fun texture. The Sriracha Almond Vinaigrette gives a bold flavor finish where the almonds provide a richer mouthfeel to balance out the spiciness of the Sriracha.

MAD Story

Growing up, Genghis Khan (known then as Temujin) had only one goal: to win Top Chef Mongolia. He watched the show every week and would always recreate the winning dishes. He also loved to cook the most creative meals he could imagine with traditional Mongolian ingredients like lamb, goat, potatoes, carrots, noodles and rice. Everyone loved his food but agreed it lacked a “wow” factor. Temujin became desperate to stand out amongst the competition so he began to order top-rated, fresh ingredients from faraway lands via Amazon. No one in his village had even heard of mango, corn or arugula, but this didn’t deter Temujin from combining these exotic foods into something never-before-seen: a salad. His creation was an instant hit but it wasn’t until he added a Sriracha Almond Vinaigrette that the executive producers of Top Chef Mongolia finally took notice. They loved this dressing atop the carrot/mango/green onion/corn combo so much, they named him an instant winner! Today Temujin may be gone, but his tasty legacy lives on.
