Edgar Allan Poe
This salad is all about simple yet bold flavors. Apples and pears bring a fresh brightness, walnuts and blue cheese add a rich mouthfeel. But the Port Wine Vinaigrette is the standout. I started by reducing port wine to amplify the flavors and bring out more sweetness. I then mixed it with sherry wine and olive oil to create a deeply flavored, complex dressing that pairs well with rich ingredients like steak and pears and blue cheese.
Once upon a midnight dreary Poe was hungry, weak and weary.
Craving a bowl chock full of greens, fruits, nuts and cheese -- But living in 1845, people didn't realize salads helped them thrive with ease.
Pondering how he'd survive, he consulted his raven who spoke with ease "I don't know how to get my greens, a little help, raven please?"
"Make your own you idiot." Snapped the raven to Poe. "But people in the 1800s don't eat salads yet!" Poe fired back. "But hmm, maybe if I try hard to find fresh supplies, perhaps I can start my own enterprise?"
So Poe set out to assemble the perfect healthy blend, and when he started his own farm, he thought his search had come to an end.
But he was too ahead of his time, nobody bought his salads, and his bank ceased to lend. So he sat at home broke and ranting to his raven...And then died alone.
But this sad tale has a moral, it's true: Honor Poe's dream of eating better or he will resurface from the grave and haunt you.
