Mad Fact

Doc Holliday spent his last 57 days in bed and was delirious for 14 of them. On November 8, 1887, he awoke, clear-eyed, and asked for a glass of whiskey. It was given to him, and he drank it down with obvious enjoyment. Then he said, ‘This is funny,’ and died.

Chef's Inspiration

Every bit of this salad is an ode to Arizona. Oranges and grapes were traditionally grown by the settlers whereas the pumpkin seeds are a nod to the native population. The Miso Sesame honors today's growing Asian population and brings a sweet/savory finish to the already-flavorful Doc Holliday!

MAD Story

Many know the O.K. Corral as the site of the famous gunfight between Doc Holliday and the outlaw Cowboys. But the Corral also pioneered the world’s first equine "paleo diet." The livery housed high-end horses owned by the Arizona silver mining elite, and the Corral stocked hundreds of pumpkins, thousands of grapes and bushels of oranges and onions to cater to their horses. This carefully-crafted diet resulted in horses running faster, jumping higher and living longer. But the stores of produce were decimated by the bullets in the historic shootout and the owners moved their horses to a safer barn that could properly feed them, leaving the corral in financial ruin. Doc Holliday felt personally responsible for this and wanted to help. Upon seeing the piles of fruits and veggies, as well as the hordes of curious bystanders scattered throughout the corral, Doc had a brilliant idea: sell a “bite of history” to the hungry masses! And the firefight had conveniently shredded the produce into perfect bite-size morsels. Doc sold his new salads and the O.K. Corral was saved thanks to his ingenious concoction.
