Chef's Inspiration

I like to call the da Vinci an "antipasti plate thrown into a salad." I wanted to create a very rich, filling salad without containing any meat or dairy. So I took all the traditional elements from antipasti -- roasted red peppers, cannellini beans, artichoke hearts -- and paired it with a classic, house-made balsamic vinaigrette. The result is my version of an Italian salad which I think da Vinci would enjoy, and hope you do too!

MAD Story

Before he was a famous painter, Da Vinci was simply Leo the artist. He loved to paint but was too broke to afford brushes or ink. He did however have a garden, so he used his home-grown ingredients to make a new type of art – edible portraits – to sell at a local art show. During a show, one passerby was irate at Leo’s portrait prices. So angry, in fact, he ripped some ingredients off of a painting and threw them in Leo’s face. Tasting his combination of baby greens, artichoke hearts, roasted red peppers, red onions and cannellini beans for the first time…he KNEW the mixture belonged in a bowl drizzled with balsamic vinaigrette, not on a wall! Leo abandoned edible portraits forever and exclusively sold his new “salad art” to the weekly art show visitors. As the weeks passed, a woman named Mona Lisa became obsessed with Leo’s art. He convinced her to come over so he could cook her dinner and paint her portrait…And Da Vinci’s salad, and his famous painting…became legendary.
