We are huge fans of Texas BBQ. So big, in fact, that we wanted to turn classic Texas BBQ into a salad. But how do you pack all of the lip-smackin, knee-slappin traditional BBQ flavor into a bowl of greens? The Bonnie Parker does just that by paying homage to classic Texas BBQ with a little bit of smoky, salty-sweet goodness: smoked cheddar cheese, craisins, apples, MAD Spice pecans and roasted chicken atop a bed of baby greens topped with a Smokey Cider Vinaigrette. Its a match made in BBQ lover heaven!
It’s a little-known fact that Bonnie and the Barrow Gang started robbing banks to pay for Bonnie’s side business: Salad Bowls By Bonnie. Serving up healthy fare was a risky business back in 1933, when all people wanted to eat were pork chops and egg salad sandwiches, but she had a swell selection of fresh ingredients and a dedicated fan base…all she needed was the money to pay for a modest food cart to take her salad artistry to the next level. To raise funds, the gang first robbed a hardware store in Kaufman, Texas. The robbery unfortunately only yielded $3, so a few days later the gang set their sights on a general store in a neighboring town. They got away with $15. A week later they attempted to rob a bank outside of Dallas but were ambushed by a sheriff’s posse and Bonnie was thrown in jail with the rest of the group. Worried about being locked up for the rest of her life, Bonnie quickly etched the secret recipe for her signature salad, The Lawbreaker, on the back of a bar of soap and had her mother smuggle it out after Parent’s Weekend at the prison. As Bonnie and the Barrow gang’s notoriety only grew while they sat in prison, Bonnie’s mother renamed the salad 'The Bonnie Parker' and was easily able to sell the now-infamous mix.
