The origins of the banh mi (literally meaning “wheat bread” in Vietnamese) are actually French…the French arrived in Vietnam initially as missionaries in the seventeenth century and brought their signature bread, which became the iconic base of the banh mi over time.

MAD Banh Mi

Chef's Inspiration

The MAD Banh Mi is a twist on the classic Vietnamese sandwich, and was co-created by our very own team members Scott P (Austin, TX) and Ryan L (Lakewood, CO). Most paninis tend to eat very heavy and lack the brightness that the pickled vegetables bring to the banh mi. The chicken is a great vehicle for carrying the bold flavors of the cucumber/carrot/onion slaw AND the Sriracha Almond Vinaigrette, giving this sandwich a lot of different flavors.

MAD Story

Scott P had always wanted to travel the world and visit exciting places like Switzerland, Arkansas, Vietnam and Finland to sample their local delicacies. The day he turned 23, Scott quit his job and said goodbye to his fiancé to make this dream a reality. But seven months in, while trekking through the Vietnamese jungle with his machete, he became disoriented and lost. After 53 days of aimless wandering, the only food he had left was the final scraps from his previous travels: a single piece of Swiss cheese, one chicken breast, some pickled veggies and bread. Scott bravely decided to use all his remaining food to create a banh mi-esque masterpiece as his final meal. After finishing the last bite and resigning himself to death, Scott closed his eyes and a vision of his fiancé came to him. She kept whispering something about “right, right” and Scott thought she was telling him it’s “all right” to pass. But as she began to yell in frustration, he realized she was telling him to “go right.” Scott weakly stood up and began to walk to his right. After a mere 100 yards, he discovered a MAD Greens! Turns out, he had been going in counterclockwise circles for the past couple months. Overwhelmed with emotion, Scott credited the sandwich for this revelation and decided to bring it to the masses of MAD fans.
