Chef's Inspiration

We wanted a fruit-forward dressing that celebrates the star of our summer menu: strawberries. Roasting the berries helps to bring out their sweetness and depth of flavor, creating a rich yet light vinaigrette. The tart, tangy balsamic keeps it from being syrupy while the mustard and the garlic bring the umami.
