Chef's Inspiration

Chef Lentine Alexis' trips to Istanbul inspired the Med Bowl. She calls Turkish food "strangely comforting and exotic," just like this grain bowl. It's so satisfying in all of its element...tart beets, crispy chickpeas, light carrots, fresh herbs and lemon-y sumac. The Brown Sugar Tofu is an unexpected flavor, bringing a lovely sweet component to an otherwise savory bowl. It's marinated in soy sauce, sesame oil, brown sugar and Sriracha then baked with cornstarch, instead of fried. She also added Roasted Za'atar Chickpeas which provide a nice crunch alongside their zesty, spicy and exotic flavor profile. The Med Bowl is topped with the Tahini Caesar, a creamy, lemony dressing.
