MAD Greens was founded in 2004 in an effort to bring healthy, local and delicious food to the fast-casual market and is revered for its chef-inspired food such as the Dionysos, Ty Cobb and Edgar Allan Poe salads named after MAD famous people and slightly crazy literary characters throughout history. Today, MAD Greens has 31 corporate-owned locations across four states with additional openings scheduled later this year.

We are humbled to have the opportunity to open our second Lehi location on Traverse Mountain and third restaurant in Utah, said MAD Greens CEO Darden Coors. We have received overwhelmingly positive feedback from hundreds of Utahans who love our scratch made ingredients, fresh juices, healthy kids meals and catering options. Our intent is to ensure that each guest is pleased with their entire food experience every time we are fortunate enough to serve them.

The most popular menu item thus far at MAD Greens restaurants throughout the Utah market has been the Butch Cassidy and Ty Cobb salads. The Utah inspired Butch Cassidy, which includes a variety of healthy ingredients like baby greens, grilled citrus chicken, walnuts, mango, celery and grilled sweet onions with honey mint vinaigrette, was created for Utahans only. Guests have also been eager to try and are sharing positive reviews for the healthy kids meals and the refreshing juices made from raw fruits and veggies.

MAD Greens mission is to create chef-inspired, healthy food that is made from scratch daily with distinctive offerings such as hand-crafted hummus, grilled and roasted meats, freshly baked croutons, 20+ salad dressings and countless pounds of premium produce that make every meal unique, fresh and fast.

As part of MAD Greens commitment to community organizations in each of its local markets, the company established a strong partnership with Wasatch Community Gardens. At the Lehi and Farmington grand openings they donated a portion of opening sales to the organization and will do so again from the new Lehi restaurant. Wasatch Community Gardens plans to put the donated funds from both openings toward the GREEN TEAM Farm Project, a garden-based job training program that aims to simultaneously revitalize an underutilized urban area while providing opportunities for women who are facing homelessness.
