GARDEN VEGETABLE SOUP
Put down the grilled cheese and say hello to our new vegan Tomato Soup with Garden Vegetables! This vibrant but bold soup captures the flavors of roasted veggies in an audience of slow-simmered tomato sauce heaven. It begins with sautéing our array of fresh vegetables including summer squash, zucchini, onions, carrots, green beans, golden wax beans and minced garlic with a splash of extra virgin olive oil. As the vegetables simmer, diced and ground tomatoes are slowly added, stirring the fresh and earthy flavors from the vegetables with the rich tones of the tomatoes. For the final kicker, chopped scallions and a dash of sea salt blend to bring a savory and satisfying bite to the soup.
