I have been a juicing machine ever since I got my juicer earlier this month. I have been experimenting with everything from beets to limes and cucumbers to tomatos, here is my latest juice creation recipe:
Power JUICE recipe:
- 3 Whole Golden Delicious Apples
- 1 Whole bunch of Kale
- 3 Large carrots (ends chopped off)
- 1 Large English Cucumber
- 4 pieces of celery
I really like this juice because it has a great sweet taste (from the apples) with a bite at the end and the kale gives it a beautiful color. The reason I named it POWER JUICE (besides the fact that it sounds cool) is because I feel an energy boost right after I drink it in the morning. Similar to feeling of having a shot of espresso without the caffeine.

New Years resolutions are great but like most people I have a hard time sticking to them for the whole year. To help ensure resolution completion I have devised a plan: monthly resolutions! My January resolution is two fold: 1. make juices at home with my new juicer and 2. to try new healthy food. The second one is really one of my year long resolutions that I will sprinkle into my monthly resolutions. I will be posting a series of juice recipes along with some of the new foods I have been trying out. Here is my first food that I am trying this month:
Agave Nectar-Derived from the same plant used to make tequila, agave syrup has generated lots of buzz recently. Also known as agave nectar, it has a deep, rich flavor that is slightly sweeter than honey. It's touted for its low glycemic index (GI) value, meaning it won't spike your blood sugar like high-GI table sugar. Plus, you can use about one-third less to achieve the same level of sweetness.
I have been adding Agave Nectar to my pancakes, waffles, oatmeal, coffee and really anything else that you can put sugar on. It is a great substitute.

We are happy to announce the opening of the MAD Beans & Wine Cafe which will be taking over the Novo Coffee and the MAD Wine Bar space inside the 5000 sq ft. MAD Greens at the Denver Art Museum.
The MAD Beans and Wine Cafe will feature Illy brand coffee, tea, pastries, wine, spirits, cocktails, cheese and small plates. In addition the MAD Beans & Wine Café will be bringing its hospitality level of service, training and management to the coffee bar in the gift shop of the Hamilton building. Our focus for the new MAD Beans & Wine Café is going to be friendly service, convenience and speed in a comfortable atmosphere. We also are aiming to provide a more flexible and usable space for Museum staff and attendees to conduct events, meetings etc.

As Halloween and Holidays start to roll around and the mornings become crisp and cool I start to crave warm bowls of flavorful soup. We have recently revamped our soup offering at MAD Greens and added some great new soups that are lower in sodium, calories and fat and packed with great flavor. My favorite soup so far is the 3 Bean Chili (featured in the picture) which also happens to be gluten-free and vegetarian as well as a Smart Meal Seal choice of the Colorado Department of Public Health. Some of the other great soups we are featuring are: Cream of Broccoli, Tomate with Garden Vegetables (gluten-free), Italian Wedding with meatballs, Loaded Potato (a cold weather favorite and gluten-free), Chicken Tortilla (gluten-free) and our local favorite; Colorado Green Chili.
